Sesame Orange Tofu

It’s really hard to find gluten-free and vegan Chinese food take-out, so unless I want to order steamed vegetables without sauce, I am left up to my own creations. I already had all of these ingredients, so I just had to get to work to make this really delicious dinner. I could have eaten an entire bucket of this, it was that good!

I love Spring! I love the warm (but not yet hot) weather, the sunshine, the flowers, and cooking on my grill! Given the choice of cooking on my stove or my grill, there is no choice! Spiralized Veggies with Ginger Citrus Dressing

I’m always experimenting with different ways to eat raw food and this salad is super versatile. The base vegetable can be so many different things: carrot, zucchini, yellow squash, sweet potato, etc. I chose yellow squash because that is what I had and needed to use. Pair this up with some Ginger Citrus Dressing and other veggies, and you have a refreshing and filling meal!
