Luray Caverns

For Memorial Day weekend Nathan and I decided to go visit Luray Caverns. We stayed at a Bed and Breakfast and had a relaxing time. Here I am all ready to go out for dinner: In the caverns. Thai Peanut Sauce

Dinner tonight was so good. It was simple, fast, and tasty. Plus side, these are all ingredients I have around the kitchen. This sauce is definitely going to be made again and again.2 cups coconut milk1/4 cup Thai Kitchen red curry paste3/4 cup Natural Peanut Butter (the stuff that is just peanuts, with nothing added)1/4 cup tablespoons honey (or agave)2 tablespoons apple cider vinegarPut everything into a medium-sized pan. Philly Day 2&3

Day 2 was our fun day. We started off on a Duck Tour of Philly:     Then we went to Dave and Busters for lunch. We got game gards, and look – I hit the jackpot! That afternoon we spent some time on South Street. While there, I visited¬†Sweet Freedom Bakery. It is a gluten-free, vegan, refined-sugar free, etc bakery. School trip to Philadelphia, day 1

Last weekend I took 38 students to Philadelphia for to perform in a competition. On the way up we stopped at the rest area. I was amazed at the amount of gluten-free/vegan snacks that they had. Super Pet Expo

In April we went to the yearly Super Pet Expo at the convention center. It was fun to go this time because I had Maestro to come along. Easter Dinner Recipes
