I’m always experimenting with different ways to eat raw food and this salad is super versatile. The base vegetable can be so many different things: carrot, zucchini, yellow squash, sweet potato, etc. I chose yellow squash because that is what I had and needed to use. Pair this up with some Ginger Citrus Dressing and other veggies, and you have a refreshing and filling meal!
Spiralized Veggies with Ginger Citrus Dressing
Salad Ingredients:
Spiralized or grated zucchini, squash, carrots, sweet potato, or other raw veggie.
1 cup frozen shelled edamame, thawed
1/4 cup sesame seeds
Fresh cilantro, roughly chopped
Salt & Pepper, to taste
1 avocado, peeled + chopped
Sriracha, to taste
Ginger Citrus Dressing:
1/2 cup fresh orange juice
Juice of 1 lime
Salt & Pepper, to taste
1 tbsp agave nectar/raw honey
1 inch piece of ginger, peeled
A few drops of toasted sesame oil
Directions:
1. Combine the spiralized veggies, edamame, sesame seeds and chopped cilantro in a large bow and toss lightly.
2. In a blender, mix together the dressing ingredients.
3. Pour the dressing over the salad and top with the chopped avocado pieces. Add as much Sriracha as desired! You can also add more sesame seeds and cilantro if you choose.
This looks amazing! LOVE any kind of ginger dressing!
