Black Eyed Peas, Sweet Potato, & Kale



2-3 sweet potatoes
1-2 cans of black eyed peas, drained
handfuls of kale, de-stemmed and chopped
1 small onion, chopped
salt and pepper, to taste
hot sauce and/or vinegars of choice (I used Chili Garlic Sauce)


  1. Peel, cube, and cook your sweet potatoes, either by boiling in water or roasting in the oven until tender.
  2. In a skillet, add the onion and saute a bit. Add a little water if needed.
  3. Add the kale, black eyed peas, and sweet potatoes and continue to saute until everything is heated through. Season to taste.
  4. Serve immediately, with hot sauce or vinegar (try apple cider vinegar) of your choice
