I have been vegan and gluten-free for a few years now. I have experimented numerous times trying to find a delicious way to make pancakes. I have tried combining various flours, using GF Bisquick, and making oat pancakes. Most of the time my creations are edible, but have never been like “normal” pancakes. That is, until I found Nicole’s Naturals Gluten-free and Waffle Pancake Mix.

I made these pancakes twice so far, and both times they have been fluffy, moist, and delicious. Even Nathan, who is especially picky about how his pancakes are made, really enjoyed these pancakes (so did I).

This mix is gluten, wheat, dairy, and soy free! The flavoring of the pancakes is sweet, but there is only 1 gram of sugar! Unlike other pancakes, this mix also boasts 2 grams of fiber.

I modified the recipe on the back of the tin to make it vegan and oil-free. For every cup of mix, I added 1/2 smashed banana and 3/4 cup of water. This worked out very well and tasted absolutely delicious. I will definitely be stocking this mix in my pantry for when I am in the mood for pancakes and waffles!
