Black Eyed Peas, Sweet Potato, & Kale
2-3 sweet potatoes
1-2 cans of black eyed peas, drained
handfuls of kale, de-stemmed and chopped
1 small onion, chopped
salt and pepper, to taste
hot sauce and/or vinegars of choice (I used Chili Garlic Sauce)
- Peel, cube, and cook your sweet potatoes, either by boiling in water or roasting in the oven until tender.
- In a skillet, add the onion and saute a bit. Add a little water if needed.
- Add the kale, black eyed peas, and sweet potatoes and continue to saute until everything is heated through. Season to taste.
- Serve immediately, with hot sauce or vinegar (try apple cider vinegar) of your choice
