Liberty Tree Tavern

*This dining experience took place in August 2012* I was super excited to go to Liberty Tree Tavern for dinner. I had heard great things about the potato-quinoa burger. The burger did not disappoint. It was very tasty, and I would go get it again at lunch time. The thing that I was sad about was that I did not get any mashed potatoes or vegetables to go with it. I was quite bummed out that everyone else got to enjoy these. I did get…

Art of Animation Resort

My new favorite hotel, and I haven’t even stayed there yet. We went to visit, and I was immediately enamored. The walls in the lobby were all drawings of Cars, Little Mermaid, Nemo, and Lion King. It was such a fun atmosphere. Even the pool is festive! Landscape of Flavors, the food court, is amazing. The chef was really nice. He pretty much asked what we wanted, regardless of whether it was on the menu, and made it for us. He even had gluten free…

Tutto Italia at Epcot

*This dining experience took place in August 2012* The second night at Disney I had dinner at Tutto Italia in Epcot. Again, the chef came out to discuss what I could have. Let me tell you, the pasta sauce was probably the best I have ever tasted. EVER. I could probably subsist…

Baby Cakes at Downtown Disney

*This dining experience took place in August 2012* In the heart of Downtown Disney, located next to Pollo Campero, is a small bakery called BabyCakes. Pretty much free of all allergens, I stopped there a few times for some tasty treats. Among the cupcakes, cinnamon rolls, cookies, doughnuts, and other deliciousness, I think my favorite was the cookie sandwich. Two cookies with a schmear of frosting in the middle. YUMMMM! Easter Dinner Recipes

Nathan and I decided to go the non-traditional route for Easter dinner and focus on whole-plant based foods (aka vegan). Here is what I came up with. We were actually very pleased with how everything turned out. Here is the world’s largest asparagus that I got at the farmers market this week: Easter Menu: Ginger Carrot Soup Sweet Potato Salad with Lemon Dijon Dressing Cauliflower with Nut Topping Citrus Asparagus Salad Vegetable Stuffing Wild Rice Raw Fruit Pie Ginger Carrot Soup (not pictured) Ingredients: 1…
