Butternut Apple Hash with Balsamic Maple Tempeh

I am starting to really love tempeh. It is quickly becoming my new favorite because it is different than tofu. Tempeh has a nutty flavor and quickly fills you up! As a good source of nutrients, tempeh contains good amounts of manganese, copper, fiber, protein, phosphorus, vitamin B2 and magnesium. In addition to providing the above nutrients, tempeh also provides many nutrients in a more digestible form due to the process of fermentation. Vegan & Gluten-free at Disney’s Animal Kingdom – Satu’li Canteen

Disney World‘s new Avatar-themed land, Pandora, opens on May 27, 2017 at Animal Kingdom. I was lucky to catch a soft opening the day before. Vegan & Gluten-free at Captain’s Grille – Disney’s Yacht Club

One of the lesser known restaurants in Walt Disney World is Captain’s Grille, located at Disney’s Yacht Club. This is a great restaurant that is often overlooked. It is modeled on an old-fashioned yacht club, featuring breakfast buffet, seafood & steaks. But, it also has great vegan & gluten-free potential! After a day at Epcot, Nathan and I were hungry for a dinner.,but didn’t have a reservation anywhere. And, unfortunately, Tutto Italia (where we originally wanted to eat) didn’t have any availability. We went on the…
