It’s really hard to find gluten-free and vegan Chinese food take-out, so unless I want to order steamed vegetables without sauce, I am left up to my own creations. I already had all of these ingredients, so I just had to get to work to make this really delicious dinner. I could have eaten an entire bucket of this, it was that good!
I love Spring! I love the warm (but not yet hot) weather, the sunshine, the flowers, and cooking on my grill! Given the choice of cooking on my stove or my grill, there is no choice! I was in the mood for something light and healthy and decided on some grilled tofu and veggies! Super easy to to prepare and super easy to cook!
I’m always experimenting with different ways to eat raw food and this salad is super versatile. The base vegetable can be so many different things: carrot, zucchini, yellow squash, sweet potato, etc. I chose yellow squash because that is what I had and needed to use. Pair this up with some Ginger Citrus Dressing and other veggies, and you have a refreshing and filling meal!
For dinner one night I decided to make some zucchini noodles. I really wanted something creamy to go on top of it, so I decided to soak some cashews and make sort of a Parmesan-y cream sauce. This dish was really tasty. It was exactly what my body and taste buds needed. I had two huge servings!
