I’m always experimenting with different ways to eat raw food and this salad is super versatile. The base vegetable can be so many different things: carrot, zucchini, yellow squash, sweet potato, etc. I chose yellow squash because that is what I had and needed to use. Pair this up with some Ginger Citrus Dressing and other veggies, and you have a refreshing and filling meal!
For dinner one night I decided to make some zucchini noodles. I really wanted something creamy to go on top of it, so I decided to soak some cashews and make sort of a Parmesan-y cream sauce. This dish was really tasty. It was exactly what my body and taste buds needed. I had two huge servings!
