Cranberry Glazed Tofu & Homemade Cranberry Sauce

Thanksgiving is coming up this week! I feel very unprepared because I do not yet know if I will be in town or traveling (crazy, right?). Last year I made this dish as part of my Thanksgiving feast, as the “main dish”. Thanksgiving is my favorite holiday (because I love to eat), but it is always hard to come up with a good vegan main dish that can rival a turkey. This is a good alternative, along with some side traditional dishes, such as mashed potatoes, stuffing,…

Looking for a Halloween 5k?

I know Halloween seems like a far off world, but really, it is less than two months away! I’m not sure that I am ready for autumn and all that it entails (even though it is my favorite season with the cooler air and leaves changing color), but the excitement of fun fall activities is helping to soften the blow! Mickey’s Very Merry Christmas Bunco Party!

This month I hosted some ladies from my Moms Run This Town running group at my house for a festive evening at Mickey’s Very Merry Christmas Bunco Party! Christmas Time at Disney World

Welcome back to the Mickey Monday linkup: the linkup centering around a love for Disney, sharing that love and connecting with others. Run (disney), so of course check him out.  I was at Disney World right when the Christmas Season was beginning. I went down for the Wine & Dine Half Marathon Weekend and was hoping to…

Corn Maze in the Plains

Do you have plans this weekend? What about later this autumn? I love this season and everything to do with it, so I always like to go apple picking, visit a farm, and tackle a corn maze! Last weekend I went apple picking on a farm, and this weekend I will be enjoying a corn maze at Corn Maze in the Plains! They are having their opening weekend extravaganza on September 27-28. What makes it an awesome time to visit is that they are hiding $50…

What’s Up Wednesday

What’s up this Wednesday? Well, I survived my first week back at school. It was a bit rough because of how exhausted I was from my weekend at Disneyland, but I survived nonetheless. It was a bit rough walking around school with a sprained ankle though. Of course all of my kids had to ask what happened and everything, so I was a bit of a show and tale. I had my ankle wrapped up for support and compression but it was still majorly swollen,…
